Ingredients:
12 large jalapeños, halved and seeds removed
1/2 lb cooked shrimp, finely chopped
1/2 cup cream cheese, softened
1/4 cup shredded cheddar cheese
1 tsp Cajun seasoning
1/4 cup cooked bacon, crumbled
Fresh chives, for garnish
Instructions:
Preheat Oven: Preheat to 375°F (190°C).
Make Filling: In a bowl, combine chopped shrimp, cream cheese, cheddar, Cajun seasoning, and crumbled bacon.
Stuff Jalapeños: Spoon the shrimp mixture into each jalapeño half and place on a baking sheet.
Bake & Serve: Bake for 12-15 minutes, or until the cheese is bubbly. Garnish with chives and serve warm. These make for the perfect spicy starter with a rich seafood flavor!
