Healthy Pickled Beets Recipe

Ingredients
8 medium fresh beets
1 cup vinegar
1/2 cup sugar
1-1/2 teaspoons whole cloves
1-1/2 teaspoons whole allspice
1/2 teaspoon salt

Preparation
Start by scrubbing the beets thoroughly and trimming the tops to about 1 inch. Place the beets in a pot and add enough water to cover them. Bring the water to a boil, then reduce the heat and cover the pot, allowing the beets to simmer until they are tender, which should take around 25 to 30 minutes. Once the beets are cooked, remove them from the water and let them cool. After cooling, peel the beets and slice them. Set the sliced beets aside in a bowl.

In a small saucepan, combine the vinegar, sugar, whole cloves, allspice, and salt. Bring this mixture to a boil, and let it cook for about 5 minutes. Pour this hot mixture over the sliced beets. Allow the beets to marinate in the solution in the refrigerator for at least one hour before serving. When serving, drain the pickled beets to remove any excess liquid.
